My new cocktail blog - "Cocktails at 80"

I've started collecting my writings (essays) and research on cocktails and publishing them as a blog.

My basic idea is to use researching, making, enjoying, and writing about cocktails as a way to explore fun, pleasure, and deliberate pleasurable living - an application of the view points, concepts, and philosophy I learned in a course called 'Basic Sensuality'.

Bartenders without blenders

Sounds like a Live-aid rock concert tagline..

So I am a bartender, and I have no blender. I wanted a Pina Colada here at home, and so had to be a little creative.
Its been very hot here in SF the past 3 days, and so frozen sounded good. My solution lead me to be patient, as I had to put the who concoction in the freezer for a few hours, to let it get slushy. The end result is tasty, yet must be drank quickly as it reliquifies fast.

I like drinking Stoli Vanilla with Ginger Ale and Ginger Syrup over ice.

I made the ginger syrup by boiling water and sugar and sliced up ginger until it was thick and light brown in color. Yum!

A little advice?

I work in a high volume nightclub were sales dictate shifts received and best wells. Anyone work at a club like this? My club has a circular bar with five wells. we sell collectively about 11 grand a night. Evidently I'm not as fast as some of my coworkers and I'm looking for tips on speeding up service. This is a very competitive and stressfull work enviro as you may well imagine. Please give up some thoughts and comparisons if you will.

ok ... so I'm an amateur and I don't measure stuff ... nonetheless ...

In a champagne flute or white wine glass ... pour a reasonable amount of vodka -- raspberry vodka if you like.

Add a drizzle of Chambord liqueur, till it's pretty and pink.

Fill the glass to an appropriate level with Champagne -- pink if you've got it.

Toast to Nadia.

Repeat.

1 oz capt morgan's spice rum
dash half & half
shake, strain, garnish with cinnamon
- very sweet

Champkin (?) (we need a better name)
3 oz champagne
3 oz Buffalo Bill's Pumpkin Ale

so far all three of us are leaning towards service the champkin at our party.

your favorite Mojito recipe?

Hi,

We've been researching mojitos recently and are looking for people's favorite recipes, and suggestions for which brand(s) of sparkling water you like the best. Also suggestions for best mid-grade white rum - we use myer's platinum which we find to be substantially smoother to basic bacardi light rum

So far the best one is:
- 2 tsp lime juice
- 2 TBL simple syrup (we are trying agave nectar for dietary reasons)
- 1.5 oz rum
- lots of mint leaves

muddle lime, syrup & mint leaves, fill glass with ice cubes, add rum and top with soda

gin conundrum: twist of lemon or twist of lime?

this is a question that arose in the gin and tonic tribe. would you mind shedding some light on this mystery? I am a lime girl, myself. There is something a bit latent, a bit headier, a bit more subtle in the lime as opposed to the lemon where my taste is concerned.

<<I noticed over in Europe they [gin and tonics] seem to always be served with lemon... I have always wondered why the difference between the continents.

Does anyone know what the Brits prefer? Seems like they would be the authoritative source, although everyone will have their own personal preference.>>

A Bloody Mary that could cause a riot.

So for the 4th, my roommate declared it Bloody Mary Monday. We started at 10 with a couple home baked quiches, a basket of plums, and the most ass-kicking bloody maries you've ever seen. Our numbers grew, and the nectar kept flowing. At some point we stumbled out to throw the basketball at the backboard for a while, and went down to rent some bad flicks. By the time the fireworks started going off, we couldn't quite drag ourselves off the couch and up to the roof as per the plan, but I haven't had a day like that in far too long. Here's to Mai Tai Sunday!

FUCK! I just got off work and made a drink, only to accidently knock it to the ground where it broke everywhere creating a sticky mess!!!! ARGH. And there is only one more drink left. Check the time people, it is 4:14 am right now. FUCK. Btw, the drink I remade after cleaning up the sticky broken mess is a vodka with Stewarts lime soda over ice. Very tasty.

Hemingway Daiquiri Research

After having a truly splendid Hemingway Daiquiri at Eccolo on 4th street in Berkeley, I wondered why my Hemingway Daiquiris didn't taste as good. The menu said they use Myer's platinum white rum, so I bought a bottle and did a comparison with my usual bacardi superior 1.75 liter.

1.5 oz rum
.25 maraschino liqueur
.75 lime juice
.25 grapefruit juice

With the bacardi, this made a very fragrant, but quite tart drink. I tried increasing the maraschino liqueur just a bit, but the flavor "flattened out". I then tried the Myer's platinum white, and the drink was "totally flat" - almost monotonous - couldn't taste the rum - no sweet.

So I pulled out a Margarita recipe and changed it to:
1.5 rum
.75 maraschino liqueur
.75 lime
.25 grapefruit juice

This was a great drink.

So I have to go back and make this with and without the myer's platinum white rum, but it seems like my basic issue is with the classic recipe, which is for a very dry, tart drink - too dry for me.

Have any of you tinkered with Hemingway's tipple of choice?

Velvet Rum Frost

Velvet Rum Frost:

1 oz Bacardi Vanilla Rum
Juice of 1/2 orange
Juice of 1/2 lime
splash cranberry juice
1/2 tsp sugar

Add ingredients to cocktail mixing glass, fill with ice, shake until outside of mixer is frosty, strain into cocktail glass, enjoy!

Original creation from this past week. MMMmmmm.....

Variation: May be built in glass filled with ice. Serve with straw.

need advice on smooth blender drinks

How do you get the ice blended to a uniform, fine texture without "pebbles" or chunks? It seems like if you simply blend the drink longer you will turn the ice into .... water.

Also, how to get really thick slurrys? like a sorbet?

we just had a party where we served pitchers of frozen bacardi cocktails, which were a big hit except that the texture could have been better - I was aiming for an almost 'lime sorbet' effect, but I couldn't achieve it.

if you like grape tootsie pops,you will love this.There is a liquor called creme de viollete - or parfait amour [sweet-love]It is purple and amazing.
1 part creme de viollete
1 part cocoanut rum
1.5 parts rice milk!!!!!!!!or cream
shake with ice-and serve in special glass
Of course creme de viollete is good with rice milk only too.
Everyone should try parfait amour-creme de viollette once in their lives.It is very the best ever,but hard to find.Coit liquor and the keg in S>F>Have it.

Underrated (or underserved) cocktails

What cocktails to do people think are grossly underrated, and not on enough cocktail menus, or can't be made my most 'normal' bars because they lack important ingredients?

My favourite cocktail has to be 'Death in the Afternoon' (named, suitably pretentiously, for the Hemingway novel).

To make one (in my view, at least) you do the following:

Take a champagne flute, and chill.
Place a sugar cube in the bottom (prefereably brown), and put a few drops of Angostura bitters onto the sugar cube (probably about six drops).

Pour out a shot of absinth, and pour over said sugar cube, then top up with champagne.

And you're done... mmm.

4 fresh raspberries
1 tsp sugar
1/2 lime
1.5 oz vodka
1/2 oz triple sec

in mixing glass muddle raspberries, lime, sugar with a couple ice cubes. add vodka and triple sec and ice. mix, chill, strain into cocktail glass. garnish with raspberry

*optional splash of cranberry

Very delicious! I used up about 5 trays of raspberries last night making these.

3/4 oz Chocolate Vodka (Van Gogh)
3/4 oz Brown Creme de Cacao
3/4 oz Frangelico

Chill cocktail glass, rim with cocoa powder, chill liquors in cocktail shaker, strain into cocktail glass, shave chocolate on to surface of drink as garnish.

Muddle:
9 BLUEBERRIES
2 LIME WEDGES

I've been reading about them, anybody have good recipes?

We tried a Tokyo Rose - 1 part vodka, 1 part sake, 1 part midori. when we cut it back to 1/2 part midori you could taste the vodka, at 1 vodka, 1 sake, .25 midori you can taste the sake, vodka and midori, all equally balanced. Thru some strange interaction of the sake & midori we got a definite chocolate effect.

tonight we are going to try substituting benedictine or pernod for the midori - both complex sweet herbals
