Hi,
We've been researching mojitos recently and are looking for people's favorite recipes, and suggestions for which brand(s) of sparkling water you like the best. Also suggestions for best mid-grade white rum - we use myer's platinum which we find to be substantially smoother to basic bacardi light rum
So far the best one is:
- 2 tsp lime juice
- 2 TBL simple syrup (we are trying agave nectar for dietary reasons)
- 1.5 oz rum
- lots of mint leaves
muddle lime, syrup & mint leaves, fill glass with ice cubes, add rum and top with soda

Thu, July 28, 2005 - 12:02 PMThe agave nectar works fine, we use it because O can have a bad reaction to sucrose (cane sugar) and it has a low glycemic index (south beach diet) and is more affordable than Stevia and doesn't have such a distinctive non-sugar taste like stevia -

1 part fresh lime juice
1 part cointreau, grand marnier, citronge, etc. (or picon for something new)
2 parts tequila
1/4 part orange curacao
1-2 tbsp agave syrup
1/2 - 1 part water
ice

Thu, July 28, 2005 - 12:01 PMI was looking through older cocktail recipe books and in David Embrey's art of the cocktail, he classifies a mojito as a rum collins (a tom collins made with rum) with mint.
Fancy that.

Sun, September 25, 2005 - 11:30 PMI like a traditional recipe of rum, lime wheels, mint, simple syrup (I make a lime simple syrup and keep it in the fridge - happened by accident one day I was making candied peels for a dessert and didnt want to waste the yummy lime syrup) all muddled together, poured over ice and topped with soda. However, I also have a few variations:
I know most mojito recipes call for light rum, but I really love Mt Gay in a mojito since it already has a little bit of a minty flavor.
Soda is a waste of valuable space in my glass - replace it with champagne.
I have also been known to throw in a bit of mango juice. This works best when making pitchers of mojitos for all day drinking in the sun. Waters it down a bit, so not a *traditional* mojito, but hey - its my drink.
